Banana Muffins

Banana Muffins

Preparation time: 35 minutes

Makes: 6 large muffins         -Vata, O Pitta, +Kapha

Ingredients

  • 2 large ripe bananas
  • 1/4 cup sunflower oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon cinnamon
  • 2 dates, chopped
  • 1 1/4 cups flour, barley and Indian rice flour, half and half, or 1 1/4 cups whole wheat flour
  • 1 1/2 teaspoons baking powder (1 teaspoon at high altitude)
  • 1/2 teaspoon sea Salt

Preperation

  1. Preheat oven to 350 degrees.
  2. Mash the bananas in a medium mixing bowl and stir in the oil and syrup.
  3. Mix in the spices and the dry ingredients.
  4. Spoon into well-oiled muffin tin and bake 25 minutes or until done.

Comments: Really good and quite easy. We keep meaning to see if these muffins keep well, but we never have a chance, they get eaten too fast.

Variation: Substitute 1/4 cup all fruit sweetened jam for the maple syrup. Apricot jam or orange marmalade work well. These jams have no sugar and are sweetened with fruit juice concentrate.
