Banana Muffins
Preparation time: 35 minutes
Makes: 6 large muffins     -Vata, O Pitta, +Kapha
Ingredients
- 2 large ripe bananas
- 1/4 cup sunflower oil
- 1/4 cup maple syrup
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon cinnamon
- 2 dates, chopped
- 1 1/4 cups flour, barley and Indian rice flour, half and half, or 1 1/4 cups whole wheat flour
- 1 1/2 teaspoons baking powder (1 teaspoon at high altitude)
- 1/2 teaspoon sea Salt
Preperation
- Preheat oven to 350 degrees.
- Mash the bananas in a medium mixing bowl and stir in the oil and syrup.
- Mix in the spices and the dry ingredients.
- Spoon into well-oiled muffin tin and bake 25 minutes or until done.
Comments: Really good and quite easy. We keep meaning to see if these muffins keep well, but we never have a chance, they get eaten too fast.
Variation: Substitute 1/4 cup all fruit sweetened jam for the maple syrup. Apricot jam or orange marmalade work well. These jams have no sugar and are sweetened with fruit juice concentrate.
